    This check is a planning aid, not a regulatory clearance. Under 21 CFR Part 113 the scheduled process for a low-acid canned food is established by qualified persons with expert knowledge of thermal processing, and that responsibility sits with the food manufacturer. What comes with the equipment is the retort, its instrumentation and a documented temperature distribution for the vessel you actually bought.
