The Batch-to-Line Crossing Checklist
Six obligations arrive the day a plant leaves vessels behind for a continuous line. Answer each one for your own plant and the checklist returns your readiness and the specific gaps to close before equipment lands on your floor.
The Six Obligations
1. Flow diversion is wired and proven daily
Forward flow counts as safe only when product is above the divert set point and the flow control device is energised by the safety thermal limit recorder or a legal programmable logic controller.

2. Homogenisation is sized as its own unit operation
The homogeniser has to be matched to your fat content and throughput rather than bolted on, because it is what stops a cream layer forming during shelf life.

3. Cleaning runs alkaline and acid, as separate circuits
The alkaline stage dissolves fat, protein and carbohydrate; the acid stage removes mineral deposit and milkstone. Cleaning and sanitising remain separate operations.

4. A scheduled process exists for the product
For low-acid canned food the scheduled process is selected by the processor and must be at least equivalent to the process established by a competent processing authority. No equipment supplier can establish it for you.

5. A named person holds the operating qualification
Thermal processing must be supervised by a person who attended a school approved by the Commissioner and was identified by that school as having satisfactorily completed the course, supervising only in the certified areas.

6. Records are kept and reviewed on the legal cadence
Records are retained at the plant for not less than 1 year from manufacture and for an additional 2 years at an accessible location, and are reviewed by a qualified representative of plant management not later than one working day after the process.
