Throughput on its own does not size a dryer. What sizes it is how much water has to leave every hour. This estimator converts your production rate and your two moisture figures into that number, using the mass balance and nothing else.

Only use a figure your own trial data supports
The evaporation duty is pure arithmetic and carries no assumption. The drying-area line is different: evaporation per square metre depends on the product, the bed depth and the air temperature, so the figure you pick has to come from a trial on your own material. Treat it as a sanity check on scale, not as a specification.
