Product family: fresh sausage, emulsified hot dog, smoked or cooked sausage, ham or another defined product Raw/cooked and ready-to-eat status for the destination market Recipe and raw material: meat state, formulation constraints, allergens, permitted temperature range Texture target: particle definition, emulsion requirement, visible inclusions, finished bite Product dimensions: diameter, length, portion or weight range and shape tolerance Casing and closure: natural, collagen, cellulose, casingless or clipped; supplier and loading method Thermal process: smoke, cook or dry program, process authority and monitoring requirements Cooling and exposure path after lethality

Output, packaging and inspection

Output target: required rate, shift pattern, batch size, product mix and future expansion case Package format: pack type, product count, dimensions, film and labeling Inspection: target contaminant, test standard, reject method, records and disposition workflow

Site, integration and delivery

Utilities: electrical supply, compressed air, water, steam, drainage, exhaust and cooling services Factory layout: available area, access, floor and drain conditions, personnel and material routes Existing machines: model, rating, drawings, elevation, controls, utilities and observed limitations Destination and delivery: country, documentation, requested Incoterm and named place, installation and training expectations
