Oil turnover rate is the number of production hours before make-up oil has replaced the working oil volume in the fryer. It is the figure that decides how hard your oil is working, and it is easier to change at specification time than after installation.

How It Is Calculated

Theoretical turnover equals the weight of oil in the fryer divided by the weight of oil carried out by the product each hour, where oil carried out equals throughput multiplied by the oil content of the finished product.1 Actual turnover is the theoretical figure divided by utilisation, because start-up, shut-down, product changeover and mechanical interruptions put real fryer utilisation at 80–90%.1

Industrial fryers run between 5 and 10, and degradation rises with the figure.1 A long turnover time means the same oil is being heated for longer before it is refreshed.

Turnover rate is one input to oil management, not the whole picture. Discard decisions in most European jurisdictions are made on polar content, where the maximum is commonly 25% and the range across the group runs 20% to 27%.3
