Electric, gas and thermal-oil heating are all available on the ST-YZJ range. They differ on how tightly they hold temperature, how fast they recover after loading, and what they need from your plant. Answer four questions and the tool states which fits and what it costs you.
Your Requirement
Standard palm oil should not be pushed past 363 °F (184 °C), the point at which the oil begins to crack, and the ceiling differs by oil.2

Whichever you choose, the operating rules are the same. Do not run the fryer below 80% of nominal capacity, and if production halts for more than 30 minutes drain the fryer and cool the oil rather than circulating it hot with no product.2
